Baked Garlic Portabello Mushrooms
Suitable for campfire, barbecue, camping and caravanning.

4 portabello mushrooms
1 onion, finely chopped
2 garlic cloves, finely chopped
½ tsp fresh or dried thyme
4 tbsp olive oil
salt and pepper
4 squares of tin foil big enough to make a pouch for each mushroom.
Carefully cut the stalks out of the mushrooms and finely dice them. Mix in the onion, garlic and thyme and spoon the mixture back into the mushrooms.
Place each mushroom in the middle of each separate sheet of foil, and make a pouch by sealing up 2 sides, add a tablespoon of olive oil to each pouch, and then seal up the final side. Cook on a BBQ or campfire for 15 minutes.
